What rate does a currency converter usually show?

Most converters show an indicative market or reference rate, not necessarily the exact rate your bank, card network, or money changer will apply. The final customer rate often includes spread, markup, or service charges.

Why is the converted amount different from what my card statement shows?

Card issuers may use network rates, add forex markup, and convert on the posting date rather than the swipe date. Small differences in those steps can change the final amount even when the market barely moves.
